The Pine Tavern, one of Bend’s most popular landmarks for over eighty years, enters a new chapter with Bill & Gail McCormick at the helm. Bill McCormick is the co-founder of the famous McCormick & Schmick’s Seafood Restaurants. And he considers himself a number one fan of the Pine Tavern since first dining at the restaurant in the late 60’s.
Not just restaurateurs, the McCormicks now calls Central Oregon home. They are committed and excited to engage in the Bend community. Both have served on many boards in leadership positions in the arts, culture and humanities in the past and have brought that same energy to Bend, Oregon.

What is your favorite food to pair wine with?
I enjoy pairing wine with proteins in general and yet there are so many tasty options. If I had to narrow it down, I’d choose either Pinot Noir with fresh salmon or a big Cabernet with a perfectly marbled ribeye steak.
When did you know you wanted to be a chef?
Growing up in a busy household with six siblings, my mom and I ended up cooking for the family so I started experimenting in the kitchen very early in life and absolutely fell in love with it.
It’s your last weekend on earth…what city are you eating in and why?
My favorite city would be a small fishing village nestled against a hillside at the northern end of Tillamook Bay called Garibaldi. I love the freshness of various foods especially the fresh Dungeness crabs, ling cod, rockfish, and even octopus.
